Recipes for Holiday Tins
Wednesday, December 15th, 2010It’s time to start filling your holiday tins. Here are a few of my favorite recipes that are wonderful to share with family and friends and also serve as nice gifts. Think of all the people you could give a holiday tin filled with homemade goodies this season: friends, family, teachers, mailman, garbage man, neighbors, kid’s friends and list could go on and on. Not only is it a delicious treat it’s also a thoughtful present since your time and love went into making each holiday tin. Make sure to add your own personal favorite treats to the tin, the more goodies the merrier!
Chocolate Covered Coconut Balls
Coconut Balls
Ingredients:
- 1 stick butter
- 1 lb. confectioners sugar
- 14 oz. coconut
- 1 c. walnuts, chopped
- 3/4 c. condensed milk
- 1/2 tsp. vanilla
Directions:
- Melt butter then remove from heat
- Add sugar, coconut, nuts, condensed milk, and vanilla.
- Mix until well blended
- Chill in refrigerator for 3-4 hours
- Then shape into bite sized balls
- Chill balls in freezer for 1 hour
Dipping chocolate:
- 12 oz. tempered chocolate
Directions:
- In double broiler melt chocolate until smooth
- Place a toothpick in each ball and dip into chocolate
- Let them drip a little and place on wax paper until set
- You may place each chocolate into small candy cups for finishing touch
Sugared Peanuts
Ingredients:
- 2 c. raw peanuts
- 1 c. sugar
- ½ c. water
- Salt
Directions:
- Put peanuts, sugar and water in heavy sauce pan
- Cook and stir over medium heat until mixture crystallizes and coats peanuts
- Spread peanuts evenly in buttered 15 X 10 pan
- Sprinkle with salt
- Bake at 275 degrees for 15 minutes
- Turn with metal spatula and bake 15 minutes more
- Once peanuts are cooled place in cellophane with ribbon or small candy cups
