Dinner on the Fly
Tuesday, September 14th, 2010Do you need to put something on the table for dinner, fast? If you’re like me you want it to come together quickly but also have a little personal touch to it. I was recently in the same position as I had family coming over for dinner unexpectedly. I was also short on time (like always) and needing to rush out the door.
I quickly rallied in my kitchen and whipped up a cabbage ramen salad. I put it in the frig so the flavors could blend nicely together while I was out. On my way home I stopped by the local market and picked up a rotisserie chicken (told you I was short on time) and a fresh loaf of French bread. I had just enough time to put the finishing touches on the salad, slice the bread and plate up the chicken before our guest where knocking on the door.
A lot about how your meal is perceived is how it is presented Even though it was a simple salad and roasted chicken when displayed nicely it takes on a whole new persona.
The entire meal was a total hit and something I am going to repeat for sure. An added bonus was clean up was a breeze. I was able to get out of the kitchen and outside to enjoy our guest.
Ramen Salad
Ingredients:
- 1/2 head cabbage, finely chopped
- 4 green onions, chopped
- 1 pkg. Top Ramen noodles (beef or chicken), crumbled
- 1/2 c. sliced almonds
- 1 pkg. sunflower seeds (optional)
Dressing
Ingredients:
- 2 tbsp. sugar
- 3 tbsp. vinegar
- 1/2 c. salad oil
- 1/2 tsp. pepper
- Flavor packet from the noodles
Mix together everything , except the noodles and refrigerate a few hours.
