Cucumber Sake Sangria
Wednesday, July 7th, 2010Summer is the perfect time to have friends over for a nice refreshing cocktail. Why not take a few extra minutes to WOW your guest with a little something unique like, Cucumber Sake Sangria. Here is a recipe for sangria with a light, fun, and refreshing twist.
Ingredients:
- 1 large seedless cucumber
- 2 C. water
- 2/3 C. sugar
- 1 T. peeled ginger, finely grated
- 2 T. fresh lemon juice
- 1 bottle chilled Sake
Directions:
- Cut cucumber into 3 equal pieces, crosswise
- Peel and chop 2 pieces and put into blender
- Peel remaining piece, leaving stripes of green peel
- Halve peeled piece and core out middle
- Thinly slice
- Add water, sugar, ginger and lemon juice to blender and puree until smooth
- Pour through cheesecloth into a pitcher
- Add Sake and cucumber slices
- Stir and chill for up to 2 hours
- Best served over ice
