Cucumber Sake Sangria

Summer is the perfect time to have friends over for a nice refreshing cocktail. Why not take a few extra minutes to WOW your guest with a little something unique like, Cucumber Sake Sangria. Here is a recipe for sangria with a light, fun, and refreshing twist.

Ingredients:

  • 1 large seedless cucumber
  • 2 C. water
  • 2/3 C. sugar
  • 1 T. peeled ginger, finely grated
  • 2 T. fresh lemon juice
  • 1 bottle chilled Sake

Directions:

  1. Cut cucumber into 3 equal pieces, crosswise
  2. Peel and chop 2 pieces and put into blender
  3. Peel remaining piece, leaving stripes of green peel
  4. Halve peeled piece and core out middle
  5. Thinly slice
  6. Add water, sugar, ginger and lemon juice to blender and puree until smooth
  7. Pour through cheesecloth into a pitcher
  8. Add Sake and cucumber slices
  9. Stir and chill for up to 2 hours
  10. Best served over ice
