Memorial Day weekend is coming up and usually what that means is copious amounts of food, especially junk food! Don’t get too caught up buying chips and crackers, focus on delicious, fresh veggies, pita chips, olives with great dips that are healthy!

Here are some great healthy dips to use this weekend or at any party!

Spicy Bean Dip


Ingredients:

  • 1/4 cup(s) fat-free canned refried beans
  • 1 tablespoon(s) salsa
  • 1 1/2 teaspoon(s) chopped fresh cilantro
  • 1 minced scallion, (optional)
  • Directions:

    1. Combine refried beans, salsa, cilantro and scallion (if using) in a bowl.
    2. Serve with tortilla chips, pita chips or cucumber slices.

    Roasted Eggplant & Feta Cheese


    Ingredients:

  • 1 medium eggplant, (about 1 pound)
  • 2 tablespoon(s) lemon juice
  • 1/4 cup(s) extra-virgin olive oil
  • 1/2 cup(s) crumbled feta cheese,  preferably Greek
  • 1/2 cup(s) finely chopped red onion
  • 1 small red bell pepper, finely chopped
  • 1 small chile pepper, such as jalapeño, seeded and minced (optional)
  • 2 tablespoon(s) chopped fresh basil
  • 1 tablespoon(s) finely chopped flat-leaf parsley
  • 1/4 teaspoon(s) cayenne pepper, or to taste
  • 1/4 teaspoon(s) salt
  • sugar, (optional)
  • Directions:

    1. Position oven rack about 6 inches from the heat source; preheat broiler.
    2. Line a baking pan with foil. Place eggplant in the pan and poke a few holes all over it to vent steam.
    3. Broil the eggplant, turning with tongs every 5 minutes, until the skin is charred and a knife inserted into the dense flesh near the stem goes in easily, 14 to 18 minutes.
    4. Transfer to a cutting board until cool enough to handle.
    5. Put lemon juice in a medium bowl.
    6. Cut the eggplant in half lengthwise and scrape the flesh into the bowl, tossing with the lemon juice to help prevent discoloring.
    7. Add oil and stir with a fork until the oil is absorbed (It should be a little chunky).
    8. Stir in feta, onion, bell pepper, chile pepper (if using), basil, parsley, cayenne and salt. Taste and add sugar if needed.

    Garden Salsa


    Ingredients:

  • 1 1/4 pound(s) tomatoes, diced
  • 1/4 cube(s) sliced green olives
  • 1/4 cup(s) hot pepper relish
  • 1 bunch(es) scallions, sliced
  • 1 tablespoon(s) red-wine vinegar
  • 2 teaspoon(s) minced fresh oregano
  • 1/8 teaspoon(s) salt
  • Freshly ground pepper , to taste
  • Directions:

    1. Combine tomatoes, scallions, olives, hot pepper relish, vinegar and oregano.
    2. Season with salt and pepper.
