Mother’s Day Lunch/Dinner Recipes
Thursday, May 6th, 2010Celebrate your mom by surrounding her with great family and great food! Don’t be fooled by treating your mom to a fancy restaurant – they’re often costly and the wait is often long. Instead save your money and have a lovely dinner at home!

It’s intimate and low-key. Just follow these recipes for a great dinner on the girll! (Take a look at the Mother’s Day Brunch I shared with your perviously).
Grilled Sweet Salmon
This is one of my family’s favorite recipe and it’s been a huge hit with everyone I know, if your mom loves fish, this recipe is for her!
Ingredients (for 6 servings):
Directions:
- In a plate, season salmon fillets with lemon pepper, garlic powder, and salt and set aside.
- Then in a small bowl, stir together soy sauce, brown sugar, water, and vegetable oil until sugar is dissolved.
- Place fish in a large resealable plastic bag with the soy sauce mixture, seal, and turn to coat.
- Refrigerate for at least 2 hours.
- Preheat grill for medium heat.
- In large almunimum foil, lightly oil before placing salmon down on aluminim oil.
- Place salmon ontop of alumnimum foil and place on grill.
- Be sure to constantly add marinade every so often, cook salmon for 6-8 minutes of until salmon is flaky with fork.
Serve with white rice, vegetables, pineapple slices and/or side shrimp kabobs.
BBQ Chicken
A BBQ is not complete without the ultimate staple and that is, BBQ chicken! This recipe is delicious and very simple!
Ingredients (for 6 servings):
Directions:
- Heat oil in a medium saucepan over medium heat.
- Add the onion and garlic and saute for 5 to 10 minutes, or until onion is tender.
- Then add the ketchup, Worcestershire sauce, vinegar, brown sugar and water. Mix together well and season with salt and pepper to taste.
- Reduce heat to low, cover and simmer for 20 minutes. Set aside, covered, and let cool.
- Place chicken in a shallow, nonporous dish and pour sauce over chicken, reserving some sauce in a separate container for basting.
- Cover chicken and marinate in the refrigerator for at least one hour, or overnight. Cover reserved sauce, if any, and keep in the refrigerator.
- Preheat an outdoor grill for medium high heat and lightly oil grate.
- Grill chicken over medium high heat for 8 to 12 minutes per side, basting occasionally with the sauce, if any, until internal temperature reaches 180 degrees F (80 degrees C).
Enjoy with a side of mashed potatoes, baked beans, baked potato, vegatbles or salad.
Kogi Beef
Kogi is a Korean style of meat. This is a sure favorite of mine! The meat is tender, thin and delightfully well marinaded. If your mom loves meat, this will be a winner!
Ingredients (for 6 servings):
Directions:
- In a large resealable plastic bag, combine beef with garlic, pear, green onions, soy sauce, sugar, sesame oil, rice wine, sesame seeds, fresh ginger, and ground black pepper. Reserve some marinade for basting.
- Seal bag and refrigerate for 2 to 3 hours.
- Preheat grill pan over high heat. Brush oil over grill pan, and add beef.
- Cook, turning to brown evenly, for 3 to 6 minutes, add marinade for flavor and cook until done.
Enjoy with rice, vegetables, potatoes salad or any of your favorite side dishes.
