Mother’s Day Brunch Recipes

Berry-Good French Toast
Ingredients (for 6 servings):
Directions:
- Preheat oven to 350 degrees F (175 degrees C). Lightly butter an 8×8 inch baking pan.
- Line bottom of pan with bread cubes.
- In a large bowl, beat together eggs, milk, 2 tablespoons sugar, salt and vanilla.
- Pour egg mixture over bread. Dot with margarine; let stand for 10 minutes.
- Combine remaining 2 tablespoons sugar with 1 teaspoon cinnamon and sprinkle over the top.
- Bake in preheated oven about 45 to 50 minutes, until top is golden.
- Add fresh fruit and top with maple syrup.
Fluffy Scrambled Eggs
Ingredients:
- 8 eggs
- 2 heaping tablespoons sour cream
- 1 tablespoon water
- Salt and freshly ground black pepper
- 2 tablespoons butter
- 1/2 to 3/4 cup grated cheddar cheese
Directions:
- In a medium size bowl, beat eggs, sour cream, water, and salt and pepper until fluffy.
- Using a nonstick frying pan, melt butter and cook eggs over low heat, stirring occasionally. Stir in the cheese.
- Cook until you reach desired consistency.
- Serve hot with country ham and biscuits.
Homemade Hasbrowns
Ingredients:
Directions:
- Cook whole potatoes in a large saucepan of salted boiling water for 10 minutes; drain and let cool.
- When potatoes are cool enough to handle, grate them with a coarse grater.
- In a large non-stick skillet, heat oil and butter together and cook hash browns over medium-low heat for about 10 minutes on each side, or until crisp and well-browned.
