Mother’s Day Brunch Recipes

Follow these great Mother’s Day Brunch ideas…

Berry-Good French Toast

Ingredients (for 6 servings):

  • 5 cups bread cubes
  • 4 eggs
  • 1 1/2 cups milk
  • 1/4 cup white sugar, divided
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon margarine, softened
  • 1 teaspoon ground cinnamon
  • Slice fresh fruit to add on top (strawberries, blueberries, blackberries…etc)
  • Directions:

    1. Preheat oven to 350 degrees F (175 degrees C). Lightly butter an 8×8 inch baking pan.
    2. Line bottom of pan with bread cubes.
    3. In a large bowl, beat together eggs, milk, 2 tablespoons sugar, salt and vanilla.
    4. Pour egg mixture over bread. Dot with margarine; let stand for 10 minutes.
    5. Combine remaining 2 tablespoons sugar with 1 teaspoon cinnamon and sprinkle over the top.
    6. Bake in preheated oven about 45 to 50 minutes, until top is golden.
    7. Add fresh fruit and top with maple syrup.

    Fluffy Scrambled Eggs

    Ingredients:

    • 8 eggs
    • 2 heaping tablespoons sour cream
    • 1 tablespoon water
    • Salt and freshly ground black pepper
    • 2 tablespoons butter
    • 1/2 to 3/4 cup grated cheddar cheese

    Directions:

    1. In a medium size bowl, beat eggs, sour cream, water, and salt and pepper until fluffy.
    2. Using a nonstick frying pan, melt butter and cook eggs over low heat, stirring occasionally. Stir in the cheese.
    3. Cook until you reach desired consistency.
    4. Serve hot with country ham and biscuits.

    Homemade Hasbrowns

    Ingredients:

  • 1 lb medium-sized potatoes  peeled but left whole
  • 4 tablespoons vegetable oil
  • 2 tablespoons butter
  • salt and pepper
  • Directions:

    1. Cook whole potatoes in a large saucepan of salted boiling water for 10 minutes; drain and let cool.
    2. When potatoes are cool enough to handle, grate them with a coarse grater.
    3. In a large non-stick skillet, heat oil and butter together and cook hash browns over medium-low heat for about 10 minutes on each side, or until crisp and well-browned.
