Easter Dinner Menu Ideas

Classic Rack of Lamb, a spring staple that’s perfect for a holiday dinner.

Ingredients:
- 1/2 cup fresh italian seasoned bread crumbs
- 2 tablespoons minced garlic
- 2 tablespoons of chopped thyme
- 2 tablespoons chopped fresh rosemary
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1 (7 bone) rack of lamb, trimmed and frenched
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
Directions:
- Preheat oven to 450 degrees F (Be sure to move oven rack to the center position).
- In a large bowl, combine bread crumbs, garlic, rosemary, 1 teaspoon salt and 1/4 teaspoon pepper.
- Toss in 2 tablespoons olive oil to moisten mixture and set aside.
- Season the rack all over with salt and pepper.
- Heat 2 tablespoons olive oil in a large heavy oven proof skillet over high heat.
- Sear rack of lamb for 1 to 2 minutes on all sides.
- Set aside for a few minutes.
- Brush rack of lamb with the mustard.
- Next, roll it in the bread crumb mixture until evenly coated.
- Cover the ends of the bones with foil to prevent charring.
- Arrange the rack bone side down in the skillet.
- Roast the lamb in preheated oven for 12 to 18 minutes, depending on how you’d like it cooked. With a meat thermometer, take a reading in the center of the meat after 10 to 12 minutes and remove the meat, or let it cook longer, to your taste.
- Sprinkle thyme on top and let it rest for 5 to 7 minutes, loosely covered, before carving between the ribs.
Au Gratin Potatoes, a perfect pairing for lamb.

Ingredients:
- 4 russet potatoes, sliced into 1/4 inch slices
- 1 onion, sliced into rings
- salt and pepper to taste
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 2 cups milk
- 1 1/2 cups shredded Cheddar cheese
Directions:
- Preheat oven to 400 degrees F (200 degrees C).
- Butter a 1 quart casserole dish.
- Layer 1/2 of the potatoes into bottom of the prepared casserole dish.
- Top with the onion slices, and add the remaining potatoes.
- Season with salt and pepper to taste.
- In a medium-size saucepan, melt butter over medium heat. Mix in the flour and salt, and stir constantly with a whisk for one minute. Stir in milk. Cook until mixture has thickened.
- Stir in cheese all at once, and continue stirring until melted, about 30 to 60 seconds.
- Pour cheese over the potatoes, and cover the dish with aluminum foil.
- Bake 1 1/2 hours in the preheated oven
