Cinco de Mayo Recipes

A lot of color and a lot of flavor – Mexican dishes always have both! Try any of these delicious Mexican dishes to make for your friends and/or family to celebrate Cinco de Mayo!

Carne Asada Tacos


Ingredients (serves 4):

  • 1 pound boneless beef top sirloin, cut into thin bite-size slices
  • 1/4 teaspoon salt
  • All-purpose seasoning salt (Recommend: Lawry’s seasoning salt)
  • 3/4 teaspoon freshly ground black pepper
  • crushed red pepper for taste
  • 2 lime
  • 2/3 (28 ounce) can tomatillos
  • 1-1/3 fresh jalapeno peppers, seeded
  • 2 tablespoons and 2 teaspoons canola oil, divided
  • 2/3 (10.5 ounce) can beef broth
  • 8 (6 inch) corn tortillas
  • 1/3 large onion, chopped
  • 1-1/3 tomatoes, chopped
  • 2/3 avocado – peeled, pitted and sliced
  • 2/3 bunch fresh cilantro, chopped
  • 1 lemon
  • Directions:

    1. Place sliced meat into a shallow bowl, and season with salt, black pepper, crushed red pepper and seasoning salt (all to liking).
    2. Squeeze lime juice over the meat, and turn until evenly coated.
    3. Cover bowl and refrigerate for 30 minutes.
    4. In a blender or food processor, combine tomatillo and jalapeno. Puree for 15 to 20 seconds, or until thick.
    5. Heat 1 tablespoon oil in a large skillet over medium high heat. Carefully pour in tomatillo mixture.
    6. Cook, stirring frequently, for 5 minutes.
    7. Stir in beef broth. Reduce heat, and simmer for 20 to 30 minutes, or until mixture coats a spoon.
    8. Transfer mixture to a serving dish.
    9. Heat tablespoon oil in a large skillet over high heat.
    10. Stir in 1/3 of the beef, and saute for 1 minute.
    11. Transfer to serving dish. Repeat with remaining beef.
    12. Meanwhile, heat tortillas in the oven or microwave, according to package instructions.
    13. To serve, place two tortillas on top of each other. Add desired amount of meat, spoon over some tomatillo mixture. Top with onions, tomatoes, avocado and cilantro.
    14.  Garnish with a wedge of lemon, to be squeezed over taco before eating.
