Vegan Cookie Delights
Tuesday, March 2nd, 2010Next time you have your friends over surprise them some delicious cookies – delicious vegan cookies, that is! They’ll be amazed at how delectable they are without any dairy products!
Vegan Snickerdoodle Cookies

Ingredients:
- 3/4 cup margarine
- 1 1/3 cups sugar
- 1 teaspoon vanilla
- 1/4 cup soy milk
- 2 1/2 tablespoons cornstarch
- 3 cups flour
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon cornstarch
- 1 teaspoon cinnamon
- 1 tablespoon cinnamon
- 2 tablespoons of sugar
Directions:
- Preheat oven to 325°F.
- In a bowl, cream together the margarine and sugar until fluffy.
- Add the vanilla, soy milk, and cornstarch and mix.
- Sift in the flour, baking powder, salt, cornstarch, and cinnamon.
- Stir all ingredients together (if the dough is too dry and crumbly, add a splash of soy milk).
- In a different, smaller bowl mix the sugar and cinnamon together.
- Form the dough into 1 1/2 inch balls and roll in the cinnamon sugar mixture (mixture that’s in the small bowl).
- Place on a lightly greased cookie sheet and flatten slightly.
- Bake for about 12 minutes or until golden around the edges, but still soft on top, then transfer to a wire cooling rack.
