Sunday Supper

Sundays are often the day of rest for many people. Some go to spend time with friends or go visit relatives. More than likely in either of those situations, people tend to gather around the kitchen table.

Have you ever hosted a Sunday Supper or went to visit your friends or family for Sunday Dinner? Here is a great menu to host your own Sunday Supper or a great idea for a delicious dish to bring over next time your friends or family have a gathering.

Pancetta Wrapped Chicken Breast

 

Ingredients:

  • 1 chicken breast, skin removed
  • 1 large leek
  • Few sprigs fresh thyme
  • 1/2 cup of olive oil
  • 1 tablespoon butter
  • Pinch of sea salt
  • Black pepper, freshly ground
  • A swig of white wine
  • 7 slices pancetta

Directions:

  1. Preheat oven to 400°F with rack centered.
  2. Place chicken breast (or breasts) in a bowl.
  3.  Wash and trim the leek, remove outer leaves, and cut it into 1/4-inch pieces.
  4. Add leek to bowl along with a few leaves from one of the thyme sprigs, the olive oil, the butter, a pinch of salt and pepper, and the white wine.
  5. Toss everything together.
  6. Add leek flavoring mix to a snug baking dish.
  7. Wrap chicken in the pancetta and place in dish.
  8. Drizzle with olive oil and add a couple thyme sprigs to the dish.
  9. Cook in center of oven for 25 to 35 minutes.

Garlic Mashed Potatoes

Ingredients:

  • 2 pounds unpeeled red potatoes, quartered
  • 5 ounces butter, room temperature
  • 2 ounces Romano cheese, grated
  • 1 tablespoon and 2-3/4 teaspoons chopped garlic
  • 1 teaspoon salt
  • 1 teaspoon dried oregano

Directions:

  1. Bring a large pot of salted water to a boil.
  2. Add potatoes and cook until tender but still firm( about 45 minutes).
  3. Drain Potatoes and place back in pot.
  4.  Stir in butter, cheese, garlic, salt and oregano.
  5. Mash with a potato masher or with an electric mixer.

Simple Sunday dinners are a great way to catch up with friends or relatives. They don’t have to be fancy or difficult dishes, just take some time to enjoy great company with great food!
